My friend Melanie gave me this recipe. These are really versatile. They’re like cream puffs but savory. I have filled them with sausage, with crab dip, with whatever. They’re cute and nice for a shower or some occasion where everybody is nibbling on something. You could also fill them with tuna, grated cheese, other dips, and many other things. It makes 50 puffs. These can be frozen and thawed to use later.
½ cup butter
1 cup water
1 cup flour
¼ tsp. Salt
1 cup grated Cheddar cheese
Put butter and water in saucepan and bring to a boil. Add flour and salt, beat vigorously, cooking until mixture forms a ball and does not stick to sides of pan. Remove from fire and add cheese; mix well; cool. Add eggs one at a time, beating after each is added. Drop from teaspoon onto buttered baking sheet one inch apart for appetizer size puffs. Bake 20 minutes at 425. Reduce oven to 350 and bake until light and dry. Fill puffs.
