Chicken and Dumplings

This is another one from Betsy.  You want to know about Southern or Cajun cooking, she’s the one to call!

1 whole roasting chicken, cut up
1/2 chopped onion
2-3 stalks of celery, chopped
Salt and pepper
Bisquick
2 cups milk

Put the chicken pieces in a large pot with enough water to cover them.  Add the celery and onion, and some salt and pepper.  Bring to a boil and let it boil until the chicken is cooked.  Remove chicken pieces from the water, let them cool a little, and shred the chicken meat.  Add it back to the pot and bring back to a simmer/low boil.  Make dumplings according to the Bisquick recipe.  Drop them into the pot by tablespoonfuls (or a little smaller) and cook 10 minutes more, till the dumplings are done.
