Chicken Divan

Chicken and broccoli in a sherry cream sauce. MMmmmmmm……

3 chicken breasts
1/4 cup flour
1/2 teaspoon salt
2 packages frozen broccoli (in strips, not chopped)
1/2 cup whipping cream
Dash of pepper
1/4 cup butter
3 tablespoons sherry
1/4 cup Parmesan cheese

Cook chicken in boiling salted water until tender. Drain. Reserve 2 cups broth. Slice chicken in strips. Cook broccoli in boiling salted water. Melt butter, add flour, cook 1 minute. Gradually add chicken broth, cream, sherry, and cook till thickened and bubbly. Add salt and pepper. Arrange broccoli in lightly greased 13×9 glass dish, then add 1/2 of the sauce. Place chicken on top. Stir cheese into remaining sauce and pour over the chicken. Sprinkle with a little more cheese. Bake at 350 for 20-25 minutes. Makes 6-8 servings.
