Chicken Souffle

I don’t really know why this is called “souffle” – it’s not a souffle, but maybe it’s like a pseudo-souffle. It’s something I think my mom made up a long time ago. I grew up eating it and it’s delicious.

6 slices white bread, cubed
2 cups diced cooked chicken
1/4 cup diced onion
1/4 cup diced celery
1/4 cup diced green pepper
1/2 cup water chestnuts
1/4 teaspoon salt
1/4 teaspoon pepper
2 beaten eggs
1 1/2 cup milk
1/2 cup mayonnaise
1 can cream of mushroom soup
1 cup shredded American cheese

Place 1/3 of bread in a buttered 13×9 casserole dish. Combine chicken, vegetables, salt and pepper and pour over bread. Add remaining bread. Combine eggs and milk and pour over the top. Do not stir. Refrigerate several hours (I don’t usually do this since I don’t remember to start in time). Combine mayonnaise and soup and spread over the top. Bake at 325 for one hour, uncovered. Sprinkle cheese on top after 30 minutes.
