Almond Green Beans

1 pound fresh green beans, snapped in half
1/2 small chopped onion
1 teaspoon salt
2 tablespoons butter
1 clove garlic, crushed
1 tablespoon walnut or almond oil
1/4 cup sliced almonds, toasted
1/4 teaspoon almond extract

Place beans and onion in a saucepan; cover with water and add salt. Bring to a boil, cover, reduce heat and simmer 7-10 minutes or until crisp-tender. Drain thoroughly. Place back over low heat.

Melt butter in a skillet and cook over low heat until a light golden brown. Saute garlic in browned butter for 30 seconds or just until it releases its fragrance; do not brown garlic. Remove from heat and add oil and sliced almonds. Stir until almonds are thoroughly coated.

Stir almond extract into the garlic/almonds and immediately toss with hot green beans.
