Blackened catfish, couscous with peas, sauteed zucchini
Grilled hamburgers
Jerk seasoned shrimp, leftover couscous with peas, rum-glazed plantains
Breakfast for dinner (eggs, bacon, toast)

Weekly menu

I know it’s Thursday, but still, I felt inspired to make a menu for the next few days/next week:

Red beans and rice
Stuffed sole, twice baked potatoes, broccoli
Steak, roasted winter veggies
Butternut squash lasagna
Taco soup, cornbread
Oven fried catfish, roasted potatoes

Weekly menu

Here’s what we’ll be having over the next week:

Chicken caesar salad
Clam chowder
Chicken fried rice
Shrimp and okra gumbo
Hot dogs
Red beans and rice
Taco soup
Steaks, mashed sweet potatoes, green beans

We might not get to all those items but there is the weekend, lunches, etc. If not we’ll carry them over to the next week. This is for purposes of my grocery list though.

Here’s my menu for this week:

– Proscuitto/mozzarella/pesto sandwiches (I found some delicious asiago focaccia bread at the store)
– Penne with sausage and roasted squash
– Grilled pork chops, corn and zucchini
– Jambalaya
– Shrimp creole

OK, here are my thoughts for next week. Bonus: we have nearly all this food already in the house. Of course, last week’s shopping excursion had me spending quite a bit more than the normal grocery budget. 😮

Cheese ravioli with light alfredo sauce, garlic bread
Sarah’s lemon and sage chicken, hash brown casserole, green peas
Roast pork loin, black beans and rice, rum-glazed plantains
Blackened catfish, oven fried okra, green beans
Leftover pork loin, sweet potato ravioli, roasted vegetables

Weekly menu

This is really for next week, but I am not too busy at work today, so I put this together. I’m on a quest to finish up food we have in the house, as much as possible. This will require very little shopping. I’ve given myself a “freezer and pantry challenge” to use food that we already have, to reduce waste and save money besides.

Chicken piccata, egg noodles, green peas (chicken piccata is pre-made from Sams and is in the freezer)
Pork chops (preparation TBD), rice, broccoli (pork chops in the freezer we need to use)
Soft tacos or enchiladas (have some seasoned taco meat in the freezer)
Smoked chicken/corn chowder (again, waiting in the freezer, do we see a theme here?)
Almond tilapia, baked potatoes, green beans (fish in the freezer)
Grilled catfish, grilled corn, grilled zucchini (once again, big bag of fish from Sams in the freezer)

I should only need to buy fresh produce: broccoli, corn, zucchini, potatoes, green beans (might use canned). And tortillas for the taco/enchilada night. Maybe an avocado if they are on sale.

Weekly menu

Here is what we’re having this week.  Don’t necessarily have it organized by day (I often don’t but just make a list of what we’re having) but at least I have put some thought around it:

Roast sticky chicken, sauteed zucchini and yellow squash
Baked potatoes with barbecue meat
Chicken caesar salad
Marinated pork loin with grilled corn and peas
King ranch casserole
Mini pizzas (I’m cheating and using the Boboli crusts)

See how useful the sticky chicken is? Three dinners in one and there will probably be more left over besides.

Weekly menu

Monday – crab-stuffed tilapia (I cheated and got the already-assembled fish at Target; then just baked it), wild rice and corn

Tuesday – beef stir-fry and brown rice

Wednesday – red beans and rice. Home in the crock pot as we speak!

Thursday – probably red beans and rice again

Friday – eat at the movies; we’re taking in a double feature.

F – DH b-day dinner w/ company, menu TBD
S – Leftovers from Friday or go out to dinner.
